Granola is one of those foods which is packed with lovely health giving ingredients and ought to be really good for you. Unfortunately, many shop bought granola is sadly excessively high in sugar and it really doesn’t need to be! This recipe of mine contains no added sugar or honey and it has a little bit of sweetness coming from the apple juice and the dried cherries. If you don’t find it sweet enough then it probably the contrast between this and the over sweetened supermarket brands but persevere as you will get used to it. To begin with you sprinkle with a little stevia, cinnamon too might help.

Basic ingredients

40g coconut oil
120ml apple juice
340g jumbo rolled oats (can use gluten free oats)
200g mixed nuts, roughly chopped (I like pecans and hazelnuts)
50g pumpkin seeds or seeds of your choice
50g coconut shavings (available at health food shops)
1 large egg white
80-100g dried sour cherries

Method
Heat the oven to 150C and line a baking tray with greaseproof paper. Put the oil and apple juice in a small pan and heat gently until the oil has melted and it is all combined. Take off the heat and allow to cool slightly.

Mix the dry ingredients, apart from the fruit, in a large bowl. Stir the oil and apple juice into the bowl until well distributed.

Beat the egg white in a separate bowl until frothy, then toss with the mixture.

Spread out on the baking sheet and bake for about 30-35 minutes until golden, stirring occasionally so it cooks evenly.

Leave to cool and crisp up on the tray, then stir in the fruit. Store in an airtight container.
