A fast healthy chicken tikka recipe for those on the go
This delicious recipe is easy to prepare and make and is ideal for those looking for a quick, tasty health fix. The healthy chicken tikka recipe is best served with cauliflower rice or quinoa as opposed to traditional sides like white rice.
Ingredients
(SERVES 4)
- 350g natural yoghurt
- 2tbsp tikka Curry Paste (Waitrose do a good one)
- 4 skinless chicken breasts
- 1 red onion, finely chopped
- ½ cucumber
- ½ pack coriander, chopped
- 1 lemon
- 275g pack baby plum tomatoes
- large bag salad leaves
Method
- Mix together 150g of yoghurt with curry paste in a
large bowl, add the chicken and coat in the mixture,
cover and chill for 30 mins if time allows - Prepare the Raita close to the time of eating by
halving the cucumber lengthways and scoop out
the seeds with a spoon, cut into dice then put in a
bowl with the onion, coriander and 200g of yoghurt
and add the juice of half lemon to the Raita - Line a grill pan with foil and grill the chicken for 20
mins turning until nicely browned - Assemble the salad leaves and tomatoes on a plate,
slice the chicken, serve with lemon wedge and raita - Serve with side dish of quinoa, cauli rice or leafy
green veg
