All the essential flavours here of yummy carrot cake but in the more healthy guise of Overnight oats.I use gluten free oats, almond milk and soft goats cheese in mine to make it both gluten free. and dairy free but the recipe would work with ordinary oats, milk and cream cheese.A health and delicious breakfast with a seriously naughty taste!

Ingredients (per person)

1/2 a cup of gluten free oats
1/2 cup of unsweetened almond milk
2 dessert spoons of soft goats cheese
1 medium carrot peeled and grated
1/4 cup of raisins
1/2 tsp Ceylon cinnamon
a splash of vanilla essence
a handful of walnut halves

 

Method
With the exception of the walnuts simply mix all the ingredients together in a bowl, cover and leave overnight in the fridge.
In the morning stir in the walnuts and serve.
