All the essential flavours here of yummy carrot cake but in the more healthy guise of Overnight oats. I use gluten-free oats, almond milk and soft goats cheese in mine to make it gluten-free. This healthy overnight oats recipe is delicious and would work with ordinary oats, milk and cream cheese. A healthy breakfast with a seriously naughty taste!

Healthy overnight oats recipe ingredients (per person)

1/2 a cup of gluten free oats
1/2 cup of unsweetened almond milk
2 dessert spoons of soft goats cheese
1 medium carrot peeled and grated
1/4 cup of raisins
1/2 tsp Ceylon cinnamon
a splash of vanilla essence
a handful of walnut halves

 

Method
With the exception of the walnuts simply mix all the ingredients together in a bowl, cover and leave overnight in the fridge.
In the morning stir in the walnuts and serve.
