Healthy red pepper and tomato soup recipe
A warm, nourishing soup is sometimes just what we need - but many supermarket options are packed with hidden additives and sugars. This healthy tomato soup recipe packs a punch thanks to delicious roasted red peppers. The perfect red pepper and tomato soup recipe for those who want something that doesn't take forever to make, but tastes fantastic.
Ingredients
Serves 2
290g roasted red peppers (jar), drained
270g cherry tomatoes, halved
1 garlic clove, crushed
1 vegetable stock cube
1tsp paprika
1tbsp olive oil
4tbsp ground almonds
100ml water
Method
- Put all ingredients in a blender or food processor.
- Blitz until smooth, season well and heat until piping hot before serving.
